4 Ingredient Chicken And Rice Casserole

Step 1

Preheat oven to 325 degrees F.

Step 2

Spray 9×13 pan with cooking spray.


  • 4 Boneless Skinless Chicken Breasts
  • Kosher Salt
  • Ground Black Pepper

Step 3

Add chicken breasts and season with salt & pepper. Go VERY easy on the salt. There is quite a bit in the other ingredients.


  • 1 cup Long Grain White Rice, uncooked
  • 1 packet Onion Soup Mix, lipton's preferred

Step 4

Pour uncooked rice over chicken. Sprinkle with onion soup mix.


  • 10 ounces Canned Cream of Mushroom Soup, campbell's healthy request preferred
  • 1 12 cups Water

Step 5

Combine mushrooms soup and 1 1/2 cups of water. Pour over chicken. Make sure the rice is covered with the soup mixture.

Step 6

Cover tightly with foil and and bake 1 hour 15 minutes or until rice is tender. and chicken registers 160 degrees F. Note: 1 hour and 15 minutes was fine for me but ovens/rice can vary. It may require up to 25 more minutes for rice to be tender.
