Makes: 4 servings adjust

  • 5 medium Russet Potato

Step 1

Cut potatoes into half-inch fries, put into a bowl, and cover with cold water for a half hour or more.

  • 6 tablespoons Unsalted Butter
  • 14 cup All-Purpose Flour

Step 2

Melt butter in a large saucepan. Add the flour and cook, stirring regularly, for about 5 minutes, until the mixture turns golden brown.

  • 2 12 cups Beef Broth
  • 1 14 cups Chicken Broth

Step 3

Add the beef and chicken broth and bring to a boil, stirring with a whisk.

  • 3 tablespoons Cornstarch
  • 2 tablespoons Water
  • Pepper, to taste

Step 4

In a small bowl, dissolve the cornstarch in the water, add to saucepan, and simmer for 3 to 5 minutes or until the sauce thickens. Season with pepper. Taste and add additional salt, if necessary, to taste. Make ahead and re-warm or keep warm until your fries are ready.

  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Seasoned Salt

Step 5

Drain fries and dry well. Toss with olive oil and seasoned salt. Place fries in air fryer and cook at 360 degrees for 25 minutes, shaking basket every 8 minutes, or so, and empty basket back into the bowl. Turn up temp to 400 and cook in smaller batches for another 5-7 minutes.

  • 1 12 cups Cheese Curds

Step 6

Serve fries with cheese curds layered on top with hot gravy ladled over.
