Amber's Enchilada Casserole

Amber's Enchilada Casserole

This is the August Birthday dinner!!



  • 1 whole Chicken

Step 1

Boil chicken, once cooled then shred all meat off.

Step 2

Preheat oven to 350 degrees.


  • 1 can Red Chile Enchilada Sauce, las pamas, large can
  • 1 package Corn Tortilla, large package
  • 2 cans Sliced Olives
  • 1 Yellow Onion, chopped
  • 2 packages Mexican Cheese, shredded

Step 3

Warm the enchilada sauce and the tortillas. Layer bottom of a 13x9 casserole dish with some sauce. Dip tortillas into the sauce then layer on top of the sauce in the casserole dish. Then layer with chicken, olives, onions and then cheese. Repeat to make 3 layers.

Step 4

Pour remaining sauce over the top, then sprinkle with remaining cheese. Bake for 30 minutes.
