Annie's Rice Casserole

Awesome family meal - kids love it! This dish freezes well, and makes incredible leftovers!

Directions

 

Step 1

Preheat oven to 350 degrees F (175 degrees C).

Ingredients

  • 4 cups White Rice, uncooked
  • 8 cups Water

Step 2

In a saucepan bring 8 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer 20 minutes or until rice is tender.

Ingredients

  • 1 Frozen Mixed Vegetables, 32 oz
  • 1 tablespoon Butter
  • 1 teaspoon Mrs. Dash

Step 3

Combine vegetables, butter, Mrs. Dash and water in a saucepan; bring to a boil. Boil for 4-6 minutes, or until tender. Drain.

Ingredients

  • 3 cans Canned Cream of Mushroom Soup, 10.5oz, or sub. with Cream of Chicken
  • 1 package Smoked Sausage, 16oz package Hillshire Farm Lite brand, diced

Step 4

Mix together sausage, cream of soup, and vegetables; mix well. Fold rice into vegetable mixture.

Ingredients

  • 4 cups Shredded Cheddar Cheese, or sub. with Pepper Jack Cheese for spicy taste

Step 5

Transfer into 13x9 inch baking dish. Top with cheese. Bake in preheated oven, uncovered for 20 minutes.
