Apple Bourbon Gravy

  • 1 tablespoon Sunflower Oil
  • 34 cup Celery Stalk, chopped
  • 34 cup Carrots, chopped
  • 34 cup Kentucky Bourbon
  • 1 sprig Fresh Thyme
  • 34 cup Shallot, chopped

Step 1

Heat oil, add shallots, celery and carrots cook til tander and browned. Add bourbon, thyme increasing heat to med high. Simmer untill Bourbon is mostly evaporated, about 3 minutes.


  • 1 cup Apple Cider
  • 4 cups Chicken Stock

Step 2

Add stock and cider , stirring and bring back to simmer. Stir occasionally until reduced by 1/2 about 40-50 minutes. Should be about 3 cups.


  • 14 cup Water
  • 3 tablespoons Flour

Step 3

Meanwhile whisk flour and water.


  • 4 tablespoons Salted Butter, cut into 8 pieces
  • 18 teaspoon Salt
  • 1 dash Pepper, too taste

Step 4

Strain gravy and return to pan at med high heat. Add butterwhisking till melted. Bring to boil. Whisk in about 2/3 of flour mix. Bring to boil for about 1 minute continuing whisking. If you want thicker add remaining flour and bring to boil. Add salt/pepper to taste.
