Apple Gingerbread Bread Pudding

Apple Gingerbread Bread Pudding

If you want a dessert to die for this is it. Nothing says comfort and home like this one does.

Directions

 

Step 1

MAKE GINGERBREAD: Preheat oven to 350°F. Grease and flour a 9 x 5" loaf pan.

Ingredients

  • 2 cups All-Purpose Flour
  • 14 teaspoon Salt
  • 12 teaspoon Baking Soda
  • 2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • 2 teaspoons Ground Ginger

Step 2

In a bowl, measure the flour, baking powder, baking soda, salt, ginger and cinnamon; set aside.

Ingredients

  • 1 large Egg
  • 14 cup Granulated Sugar
  • 14 cup Packed Brown Sugar
  • 12 cup Unsalted Butter, softened

Step 3

In a mixing bowl, beat the butter and sugars until light and fluffy on medium speed. Beat in the egg and continue beating until combined.

Ingredients

  • 23 cup Unsulphured Molasses
  • 23 cup Milk

Step 4

Combine the molasses and milk in a small bowl. Remove the butter mixture from the mixer. Alternate adding the flour and milk mixtures to the butter mixture. Fold the batter together with a rubber spatula.
 

Step 5

Pour the batter into your prepared loaf pan. Bake for approximately 50 minutes or until done. Let cool in pan.

Ingredients

  • 1 Macintosh Apple, peeled and diced
  • 12 cup Currants

Step 6

MAKE INTO BREAD PUDDING: Cut the gingerbread into cubes. Place in a generously buttered 8 x 8 x 2" pan. Top with the apple and currants. Set aside.

Ingredients

  • 2 cups Milk
  • 12 cup Cream
  • 12 cup Vanilla Bean (Pod), cut lengthwise and bean scaped
  • 2 Egg Yolks
  • 12 teaspoon Cinnamon
  • 1 dash Salt
  • 12 cup Sugar
  • 3 whole Eggs

Step 7

Scald the milk, cream, and vanilla bean. Meanwhile, in a bowl, combine the eggs, yolks, sugar, cinnamon, and salt. Hand whip until mixed.
 

Step 8

Press the gingerbread down to ensure complete coverage with the liquid. Let sit for 30 minutes or overnight.
 

Step 9

Preheat oven to 350°F
 

Step 10

Cover the pan with foil. Bake in a water bath for approximately 1 1/2 hours or until done. Remove the foil during the last 20 minutes of baking to brown the top. Baking times may vary with your oven. Cut into squares and serve hot.
