Apple Oatmeal Muffins

Start your morning off right with these delicious apple muffins that are packed with nutrition from heart-healthy oats and fresh apples. Low in fat and naturally sweetened with honey! Bonus: your home will smell divine!



Step 1

1. Preheat oven to 375°F.


  • 1 Egg, + 1 egg white
  • 3 tablespoons Honey
  • 12 cup Unsweetened Applesauce
  • 12 cup 100% Unsweetened Apple Juice
  • 12 cup Low-fat Milk or Unsweetened Almond or Soy Milk
  • 1 teaspoon Vanilla Extract

Step 2

2. In a large bowl, combine egg, egg white, honey, applesauce, apple juice, milk and vanilla.


  • 1 cup Whole Wheat Flour
  • 1 cup Old-fashioned Rolled Oats or Quick Oats
  • 2 teaspoons Baking Powder
  • 1 cup All-Purpose Flour
  • 14 teaspoon Salt
  • 1 teaspoon Ground Cinnamin

Step 3

3. In a medium bowl, combine two flours, oats, baking powder, baking soda, salt, and cinnamon.

Step 4

4. Fold dry ingredients into wet ingredients until just mixed. Keep in mind, you want the batter to be lumpy, so don't over-mix!


  • 1 large Apple, or 2 small, peeled, cored, and chopped

Step 5

5. Fold in the apples.

Step 6

Spoon enough batter into lined muffin pan to fill baking cups ¾ full. Bake for 18-22 minutes. Remove from pan and cool on wire rack.
