Apple Ravioli

This dish is inspired from a restaurant I recently went to and I would describe it as autumn on a plate. I love fall and this recipe.

Directions

 

Step 1

Heat oven to 350

Ingredients

  • 2 Granny Smith Apples, cored and sliced into 8 wedges each
  • 14 cup Amaretto
  • 1 pinch Nutmeg
  • 18 teaspoon Cinnamon
  • 1 pinch Ground Allspice

Step 2

In a small skillet over medium-low heat, add the amaretto and spices and let reduce until it is a thick and syrupy consistency. Add apples and saute for 3-5 minutes until tender. Set aside up to 2 hours to cool and let flavors marinate.

Ingredients

  • 14 cup Balsamic Vinegar
  • 14 cup Olive Oil
  • 12 pound Dried Fig, stems removed and sliced
  • Cooking Spray, coat the pan

Step 3

Put the balsamic vinegar in a food processor or blender and on slow, slowly drizzle the oil into the vinegar to emulsify. Place the figs into a bowl and toss with the vinegar-oil mixture. Place on a sheet tray lined with parchment paper, spray paper heavily with cooking spray. Bake for 5-8 minutes. Set aside to cool.

  • 1 package Frozen Cheese Ravioli, or make your own

Step 4

Drop the ravioli into a pot of boiling salted water and cook until floating.

Ingredients

  • 12 cup Fresh Sage, chopped
  • 1 cup Butter
  • 12 cup Raisins

Step 5

Meanwhile melt the butter in a large skillet over medium-low heat. After it is melted, add the sage and cook for about a minute. Add the Amaretto apples and Balsamic figs and saute for 3-5 minutes. Once they are heated through add the raisins and continue to saute for 1 minute more, stirring occasionally. When the ravioli is finished cooking add it to the skillet and toss together. Then serve.
