Ingredients
Step 1
For Glaze:
Add all ingredients to a small sauce pan and slowly simmer until it reaches the thickness of a glaze. Stir frequently to keep from burning.

For chicken:
Preheat oven to 375. Place chicken legs on a broiler pan or cookie sheet in opposite directions. Baste with balsamic vinegar glaze.

Step 3
Place tin foil over pan or cookie sheet to keep moist. Bake for 35-40 minutes or until chicken is done. Periodically baste chicken through bake time, placing foil back over when complete.

Step 4
Prepare rice as per directions on package. When chicken is done, let it cool and then take a fork and shred chicken off the bones into a bowl. Add 1/2 cup balsalmic vinegar and mix into chicken. Mix chicken into rice.

Drain olives and add mix them into chicken and rice. (You can substitute peas for olives if you don't like olives) Enjoy!
