Arroz Con Pollo (Rice & Chicken)

Directions

Ingredients

  • 1 cup Water, for balsamic vinegar glaze
  • 14 cup Brown Sugar, for balsamic vinegar glaze

Step 1

For Glaze: Add all ingredients to a small sauce pan and slowly simmer until it reaches the thickness of a glaze. Stir frequently to keep from burning.

Ingredients

  •   Chicken Legs, 8-10

Step 2

For chicken: Preheat oven to 375. Place chicken legs on a broiler pan or cookie sheet in opposite directions. Baste with balsamic vinegar glaze.
 

Step 3

Place tin foil over pan or cookie sheet to keep moist. Bake for 35-40 minutes or until chicken is done. Periodically baste chicken through bake time, placing foil back over when complete.

Ingredients

  • 1 package Yellow Rice Mix, medium
  • 1 cup Balsamic Vinegar, for balsamic vinegar glaze

Step 4

Prepare rice as per directions on package. When chicken is done, let it cool and then take a fork and shred chicken off the bones into a bowl. Add 1/2 cup balsalmic vinegar and mix into chicken. Mix chicken into rice.

Ingredients

  • 1 jar Green Olives, medium

Step 5

Drain olives and add mix them into chicken and rice. (You can substitute peas for olives if you don't like olives) Enjoy!
