Asian Pear Galette

Unstructured pear pie. Asian pears can be replaced with European pears, apples, stone fruits, or combo of any of the above. It is open topped so moisture is not too big of a problem.



  • 4 Asian Pears

Step 1

Peel, core, quarter & slice pears


  • 14 cup Sugar
  • 14 cup Butter, Melted
  • 12 teaspoon Ground Cinnamon
  • 1 tablespoon Flour

Step 2

Toss pears with Sugar, Cinnamon, Flour & melted butter


  • 1 Pie Crust Dough
  • 1 pinch Sugar
  • 1 pinch Salt

Step 3

Roll out pie crust to 1/8 thick. Transfer to baking sheet. Distribute fruit in even layer in the center of the crust, leaving ~ 3 inches to the edge of the crust. Gently fold entire outside edge of crust over the fruit, starting in one spot and working your way around the whole pie. It should pleat like a purse and leave about a 6-8 inch opening of the fruit. Make sure there are no punctures and the juices will stay in the pie. Sprinkle with a bit of Sugar and a pinch of large crystal salt.

Step 4

Bake in 400-425 Degree preheated oven for 30- 35 minutes. Outside crust should be browned. Fruit will have softened and collapsed a bit.
