BLT Salad

BLT Salad

Directions

Ingredients

  • 1 pound Small Shells Pasta
  • Kosher Salt, if using regular salt, use about half the amount

Step 1

Bring a large pot of water to a boil. Add a generous amount of salt (like a tablespoon or so). Stir in pasta and cook according to package directions. Pour pasta into colander and run under cool water until pasta is cooled. Drain thoroughly. Note: There is not a lot of seasoning in this salad. Be sure to really salt the water or the salad will be really bland.

  • 1 12 pounds Bacon

Step 2

Dice up bacon and fry until crisp. Remove bacon to paper towel to drain excess grease.

Ingredients

  • 3 Tomatoes, use more or less depending on size
  • 2 tablespoons Onion, finely diced
  • Mayonnaise, light is fine
  • Salt and Pepper, to taste

Step 3

Chop tomatoes and put them, including any juice, into a large bowl. Add cooled pasta and onions. Add enough mayonnaise to coat. Stir all together. Season with salt and pepper to taste. If you are not serving right away, refrigerate at this point. Note: I usually do up to this point in the morning or even the night before.

Ingredients

  • 12 head Iceberg Lettuce, use more or less to taste
  • Mayonnaise, light is fine
  • Salt and Pepper, to taste

Step 4

When ready to serve, chop lettuce and add to the pasta mixture. Add bacon and additional mayonnaise as needed. Stir to combine. Correct seasoning, if needed, with more salt and pepper.
