Bacon, Bean & Pasta Soup

A speedy and budget-friendly soup that'll keep you satisfied

Directions

Ingredients

  • 8 Bacon, chopped
  • 2 Leeks, halved & sliced
  • 4 Carrots, halved lengthways & sliced

Step 1

Fry the bacon in a large non-stick pan (it will cook in its own fat) until golden, then add the leeks and carrots and cook for about 5 minutes until softened.

Ingredients

  • 400 grams Mixed Greens, drained & rinsed
  • 1 liter Chicken Stock
  • 2 tablespoons Tomato Puree
  • 50 grams Pasta

Step 2

Tip in the beans, chicken stock, tomato purée and pasta and simmer until the pasta is cooked.

Ingredients

  • handful Flat Leaf Parsley, chopped
  • Grated Parmesan, to serve

Step 3

Stir through the parsley and serve in bowls topped with grated Parmesan.
