Directions |
Ingredients
Step 1
Dice the potatoes into 1/4" cubes. Place into a sauce pan and cover with cold water. Add about 1 teaspoon of salt for each cup of water used to cover the potatoes.
Bring to a boil.
When potatoes have started boiling, strain them in a colander and rinse with cold water.

Cut bacon into 1/2" strips, crosswise, so you end up with a lot of small pieces. In a skillet over medium heat, fry the bacon until they have rendered their fat and have only just started to get crispy. Remove from oil with a slotted spoon.

Step 3
Toss potatoes into the bacon grease and let them sizzle. Stir around browning on each side. When they are crispy on the outside, and smooth and cooked through, they are done.

Drain on paper towels and toss in with bacon and chopped parsley into a bowl. Serve immediately to ensure crispiness.
