Baked Acorn Squash with Bread Stuffing |

Using store-bought chicken stuffing, or using your own, this vegetarian dish is a hit during the holidays, or for every-day winter meals.

Ingredients
Step 1
Preheat the oven to 375 degrees, Fahrenheit. Line a 9 x 13 inch baking sheet with aluminum foil, and spray with cooking spray or lightly oil.

Cut the squash in half, removing the seeds and stringy bits. Sprinkle inside with salt. Place, cut side down, on the baking sheet. Bake for 1 to 1 1/2 hours or until tender.

Prepare the stuffing mix according to package directions while the squash is cooking. The stuffing can be made ahead, if desired.

Step 4
When the squash is done, turn it cut side up and divide the stuffing equally, filling the cavities of the squash. Bake for an addition 15 minutes, or until lightly browned.Each squash have can be cut in half again before serving, if desired.
