Baked Plantain |

A warm and lightly sweet dessert from Dr. Robert Haas, developer of the Eat to Win diet.
Directions |
Step 1
Preheat oven to 350 degrees Fahrenheit.

Mix the prune and apple juice, as well as the reserved pineapple juice from the canned pineapples.

Mix in cinnamon and nutmeg.

Step 4
Spray a baking dish with baking spray. An 8" x 8" dish will work fine for 6 servings. Arrange the plantain slices in the pan. Add the pineapple and raisins. Pour juice mixture over the top.

Step 5
Bake for 20 to 25 minutes or until bubbling. Serve over vanilla ice cream if desired, although Dr. Haas does not.
