A warm and lightly sweet dessert from Dr. Robert Haas, developer of the Eat to Win diet.

Directions

Step 1

Preheat oven to 350 degrees Fahrenheit.

Ingredients

  • 14 cup Prune Juice
  • 12 cup Apple Juice, unsweetened is preferred

Step 2

Mix the prune and apple juice, as well as the reserved pineapple juice from the canned pineapples.

Ingredients

  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Nutmeg

Step 3

Mix in cinnamon and nutmeg.

Ingredients

  • 2 large Plantain Banana, ripe and turning yellow, sliced into 1/2 inch slices
  • 12 ounces Canned Pineapple Chunks, reserve the canning juice
  • 12 cup Raisins

Step 4

Spray a baking dish with baking spray. An 8" x 8" dish will work fine for 6 servings. Arrange the plantain slices in the pan. Add the pineapple and raisins. Pour juice mixture over the top.

Step 5

Bake for 20 to 25 minutes or until bubbling. Serve over vanilla ice cream if desired, although Dr. Haas does not.
