Banana Bread Or Muffins

Directions

 

Step 1

Preheat oven to 325 degrees. Butter a 9 x 5 x 3 loaf pan or muffin pans.

Ingredients

  • 1 cup Granulated Sugar
  • 8 tablespoons Unsalted Butter, room temperature
  • 2 Eggs

Step 2

Cream the sugar and butter until light and fluffy. Add the eggs one at a time, beating well after each addition.

Ingredients

  • 4 Ripe Bananas
  • 1 tablespoon Milk
  • 1 teaspoon Ground Cinnamon
  • 12 cup Chopped Walnuts, optional

Step 3

In a separate bowl, mash the bananas with a fork. Mix in the milk and cinnamon. Fold in walnuts (optional).

Ingredients

  • 2 cups Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt

Step 4

In another bowl, mix together the flour, baking powder, baking soda and salt.
 

Step 5

Add the banana mixture to the butter mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.
 

Step 6

Pour the batter into the prepared pans. If making bread, put into the oven for 1 hour to 1 hour 10 minutes. If making muffins, put in the oven for 20 min or until cooked through.
 

Step 7

Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto a rack and cool completely before slicing. For perfectly sliced bread: turn the loaf upside down and slice.
