Barley Vegetable Casserole

A great side dish



Step 1

Preheat oven to 350. Spray 1qt casserole with nonstick cooking spray.


  • 23 cup Pearl Barley, uncooked not quick cooking
  • 2 14 Vegetable Broth
  • 12 teaspoon Garlic Powder
  • 14 teaspoon Black Pepper

Step 2

Place 1/4 C broth and barley in skillet, cook over med heat 3 minutes or until lightly browned, stirring frequently. Transfert prepared casserole. Add veges, garlic powder, pepper and remaining 2 cups broth. Mix well.


  • 12 teaspoon Margarine

Step 3

Bake, covered, 50 minutes or until barley is tender and most of liquid is absorbed, stirring several times during baking. Stir in margarine and salt, if desired. Let stand 5 minutes before serving.
