Bean-Lentil Taco Filling - Crockpot

Vegetarian taco filling - with beans, rice, and lentils - - easy and delicious!

Directions

Ingredients

  • 14 12 ounces Canned Chickpeas, rinsed
  • 14 12 ounces Kidney Beans, rinsed (can use black beans also)
  • 14 12 ounces Diced Tomatoes
  • 1 cup Brown Rice, rinse
  • 1 cup Brown Lentils, rinse
  • 1 cup Frozen Corn
  • 2 cups Water
  • 1 bag Taco Seasoning, (i like the trader joe's packet. if you don't have a packet, i've listed the original seasonings in the notes)

Step 1

Put everything into a crock pot. Cook on low for 6 hours. Enjoy!
 

Step 2

*Alternative seasoning list: 1 tsp. Chili Powder ½ tsp. Dried Oregano ¼ tsp. Chipotle Powder or Smoky Paprika ½ tsp. Hot Pepper Flakes or Cayenne Pepper 2 Garlic cloves, minced 1 tsp. Ground Cumin 1 tsp. Onion Powder ½ tsp. Celery Salt.
 

Step 3

Serving suggestions: - Serve as taco filling, with the normal taco toppings: chopped onion, lettuce, tomato, cheese, and salsa - Serve on a bed of tortilla chips, top with some cheddar cheese (melt in the microwave)
