My wife was craving meat so much she brought home stew meat. So we looked up a stew recipe. I didn't eat it, but everyone else raved about it. I noted some recommended substitutions, but the only one I actually did was for the Worcestershire sauce. The others are things I'll try next time... (Picture from website, not the "real thing")

Directions

Ingredients

  • 2 tablespoons Vegetable Oil
  • 2 pounds Beef Stew Meat

Step 1

Brown meat in hot oil.

Ingredients

  • 2 cups Water
  • 1 tablespoon Worcestershire Sauce, I substituted 1 Tbs vegetarian hoisin sauce and a dash of plain vinegar because we didn't have Worcestershire sauce. It was great - we wouldn't change back.
  • 1 clove Garlic Clove, peeled (I substituted a clove worth of minced garlic)
  • 2 Dried Whole Bay Leaves
  • 1 medium Onion, sliced
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 12 teaspoon Ground Black Pepper
  • 12 teaspoon Paprika
  • dash Ground Allspice, or ground cloves

Step 2

Add water, Worcestershire sauce, garlic, bay leaves, onion, salt, sugar, pepper, paprika, and allspice. Cover and simmer 1 1/2 hours.

Ingredients

  • 3 large Carrot, sliced
  • 3 Celery Ribs, (I used celery sticks because that's all I had)

Step 3

Remove bay leaves and garlic clove. ((I didn't remove the garlic)) Add carrots and celery. Cover and cook 30 to 40 minutes longer.

  • 8 ounces Frozen Peas, **OPTIONAL, not in original recipe!**
  • 3 Sweet Potatoes, **OPTIONAL, not in original recipe!**
  • 3 Potatoes, **OPTIONAL, not in original recipe!**

Step 4

This is where I would add in peas and/or potatoes (pick one kind, not both).

Ingredients

  • 2 tablespoons Cornstarch

Step 5

To thicken gravy, remove 2 cups hot liquid. Using a separate bowl, combine 1/4 cup water and cornstarch until smooth. Mix with a little hot liquid and return mixture to pot. Stir and cook until bubbly.
 

Step 6

(Save the reserved liquid, which came out to about 2 cups for me, for future meals that might call for (meat) stock or water - - this will impart a great flavor!)
