Bella's Roasted Vegetable Conchiglie Pasta

Directions

Ingredients

  • 1 12 cups Red Bell Pepper, large, chopped
  • 1 cup Red Cherry Tomato
  • 1 12 cups Zucchini, large, chopped
  • 1 12 cups Sweet Potato, large, chopped
  • 1 cup Red Onion, chopped
  • 1 head Garlic

Step 1

Preheat oven to 350 degrees. In a large baking tray, sprinkle salt and pepper on vegetables and toss with olive oil. Bake vegetables for 45 minutes. Set aside when done.

Ingredients

  • 1 Red Onion, diced
  • 5 cloves Garlic
  • 34 cup Olive Oil

Step 2

In a large and deep sauce pan, sweat onion in olive oil for 5 minutes. Add garlic.

Ingredients

  • 4 Lemons, juiced
  • 1 12 teaspoons Cayenne Pepper
  •   Salt and Pepper

Step 3

Turn down heat to medium low, add lemon juice, cayenne pepper, salt and pepper.

Ingredients

  • 14 cup Cream

Step 4

Add cream. Cook for few minutes.

Ingredients

  • 1 tablespoon Flour
  •   dash Nutmeg

Step 5

Whisk in flour. Add a dash of nutmeg. Add 1/2 teaspoons of salt and pepper.

Ingredients

  • 1 pound Conchiglie Pasta, cooked
  • 12 cup Flat Leaf Parsley, roughly chopped
  • 1 cup Grated Parmesan Cheese

Step 6

Mix in vegetables and pasta. Turn heat off, add in parsley and grated cheese. Serve.
