Black Bean And Wild Rice Soup

Step 1

Spray a large nonstick pot with vegetable cooking spray and place over medium high heat.


  • 1 cup Onion, chopped
  • 1 cup Corn, canned or frozen
  • 12 cup Carrot, finely chopped
  • 1 12 teaspoons Minced Garlic

Step 2

Saute onions, carrots, corn, and garlic until just starting to brown, about 5 minutes.


  • 3 12 cups Chicken Broth
  • 19 ounces Tomato, canned, with juice
  • 1 cup Canned Black Beans, rinsed and drained
  • 1 tablespoon Brown Sugar
  • 1 12 teaspoons Dried Basil
  • 1 12 teaspoons Ground Cumin
  • 13 cup Wild Rice, uncooked

Step 3

Stir in broth and the next 6 ingredients, break tomatoes with the back of a spoon, and bring to a boil.

Step 4

Lower heat to medium low, cover, and cook until rice is tender, about 30 minutes.


  • pinch Black Pepper, freshly ground, to taste
  • 3 tablespoons Fresh Parsley, chopped

Step 5

Serve topped with fresh pepper and parsley to taste.
