Black Bean Salad

Cold black bean salad with a vinaigrette dressing

Directions

Ingredients

  • 1 pound Dried Black Beans, rinsed and soaked overnight in cold water

Step 1

Drain the beans that have soaked overnight in water. In large saucepan, cover beans with 2 inches of water. Bring to boil and simmer 45-60 minutes until tender but not too soft. Drain.

Ingredients

  • 2 cups Frozen Yellow Corn, thawed
  • 2 Tomatoes, diced
  • 34 cup Scallion, thinly sliced
  • 12 cup Fresh Cilantro, chopped

Step 2

Combine beans, corn, tomato, green onion, and cilantro in a bowl.

Ingredients

  • 12 cup Extra Virgin Olive Oil
  • 12 cup Lime, juiced
  • 1 12 teaspoons Fine Sea Salt

Step 3

Whisk together dressing
 

Step 4

Pour dressing over vegetables while beans are still warm. Let cool, stirring occasionally. Serve at room temperature or slightly chilled.
