Black Beans Cuban Style

  • 2 cups Black Beans, dry
  • 2 teaspoons Salt

Step 1

Soak and drain beans. generally overnight. cook beans in fresh water until tender; add salt during cooking.


  • 3 tablespoons Olive Oil
  • 12 pound Onion, chopped
  • 12 pound Green Pepper, chopped
  • 4 Garlic Cloves, chopped
  • 1 12 teaspoons Ground Cumin
  • 1 12 teaspoons Dried Oregano

Step 2

Saute onions, peppers, garlic, cumin and oregano in olive oil.


  • 3 cups Rice

Step 3

Add beans and simmer for 25 minutes. add water for desired consistency of soup. serve over rice, sprinkled with chopped onions marinated in equal parts vinegar and olive oil.
