Black Beans With Smoked Duck

A bit of a cross between Cuban and Creole, the smoked duck stock adds unique richness to this hearty recipe. Made with this precursor recipe Smoked Duck Stock (



  • 1 Vidalia Onion, diced fine
  • 2 tablespoons Olive Oil

Step 1

Slowly saute diced onion in olive oil until it softens.


  • 1 Red Bell Pepper, diced fine
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 12 teaspoon Freshly Ground Black Pepper
  • 12 teaspoon Salt, to taste, careful not to over salt since the stock has salt already
  • 4 cloves Garlic

Step 2

Add diced pepper and seasonings. Cook another few minutes until pepper and garlic soften.


  • 2 pounds Dried Black Beans, soaked overnight, rinsed
  • 8 cups Smoked Duck Stock

Step 3

Add duck stock and beans. Top off with water until beans are covered by 1 inch of water. Stir well.

Step 4

Simmer beans 90 minutes to 2 hours. Add water as necessary if soup starts to dry out. Cook until beans are to your desired doneness.


  • 10 cups Long Grain White Rice, cooked per directions
  • 12 cup Fresh Cilantro, chopped
  • 1 cup Sour Cream, optional for garnish
  • 2 cups Extra Sharp White Cheddar, optional, shredded, for garnish
  • 14 cup Cholula Chipotle Hot Sauce

Step 5

Serve over cooked white rice with cilantro garnish. Optionally, garnish with sour cream or shredded cheddar. Exceptional with Chipotle Cholula hot sauce.
