Blueberry Citrus Cake

Blueberry Citrus Cake

Step 1

Preheat oven to 375 degrees. Grease a 9x13 baking pan.


  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • 12 teaspoon Salt

Step 2

Sift together flour, baking powder and salt, set aside.


  • 1 stick Unsalted Butter, softened
  • 1 cup Sugar
  • 3 Eggs
  • 2 teaspoons Vanilla Extract

Step 3

Using and electric mixer on medium speed, beat butter and sugar until fluffy. Add eggs and vanilla until thoroughly mixed.


  • 34 cup Milk
  • 2 tablespoons Grated Lemon Zest
  • 2 tablespoons Grated Orange Zest

Step 4

Gradually add in flour mixture, alternating with milk. Continuing mixing until smooth. Blend in lemon and orange peels. Pour into baking pan.


  • 2 cups Blueberries

Step 5

Toss blueberries in flour to coat then sprinkle into the batter. Bake 35-40 minutes. Cool completely before frosting.


  • 4 ounces Cream Cheese
  • 2 tablespoons Butter, softened
  • 3 cups Sifted Powdered Sugar
  • 2 tablespoons Orange Juice
  • 1 tablespoon Grated Lemon Zest
  • 1 tablespoon Grated Orange Zest

Step 6

For the frosting: Using an electric mixer on medium speed, beat together cream cheese and butter. Once mixed well add sugar, orange juice, lemon and orange peel; mix on low speed until blended then mix on medium speed until fluffy.

Step 7

Once cake is cooled, frost cake and garnish with blueberries, thinly sliced oranges or lemon & orange zest.
