Light and fluffy blueberry muffins

Directions

 

Step 1

Preheat oven to 375-degrees.

Ingredients

  • 12 cup Butter
  • 1 cup Sugar

Step 2

Cream butter and sugar.

Ingredients

  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Baking Powder
  • 14 teaspoon Salt

Step 3

Beat in eggs, vanilla, baking powder, and salt.

Ingredients

  • 2 cups Cake Flour, sifted
  • 12 cup Buttermilk

Step 4

Alternately add flour and buttermilk, mixing until stirred. Do not overbeat.

Ingredients

  • 2 cups Blueberries, washed and tossed in flour
  • 12 Cupcake Papers
  • 14 cup Sugar

Step 5

Fold in blueberries. Spoon into cupcake papers in muffin tin. Sprinkle with sugar.
 

Step 6

Bake 20-30 minutes until toothpick comes out clean.
