Boiled Redskin Potatoes

Simple as can be, but classic and a kid favorite



  • 1 12 pounds Red Potato, cut into 3/4" cubes

Step 1

Cut potatoes into chunks with skin on. Boil until soft, approximately 15 minutes.


  • 4 tablespoons Fresh Chives, chopped finely
  • 3 tablespoons Butter

Step 2

Drain potatoes and return to hot pan. Add butter and chives. Stir until butter is melted and potatoes are coated.


  • 12 cup Sour Cream

Step 3

Serve with sour cream garnish.
