Breast Of Chicken Cordon Bleu

  • 2 whole Chicken Breast, deboned, skin intact
  • 1 Salt and Pepper

Step 1

Preheat oven to 350 degrees. Lightly season Chicken breasts with Salt and Pepper.


  • 12 cup Milk
  • 1 Egg, slightly beaten

Step 2

Combine egg and milk to create and egg wash. Brush both sides of chicken breasts.


  • 2 slices Ham
  • 2 slices Swiss Cheese

Step 3

Place each chicken breast, skin side down, on waxed paper. Layer 1 slice of ham and 1 slice of cheese on half of each breast. Brush Ham & Cheese liberally with egg wash. Fold halves together, wrapping skin around all white meat.


  • 12 cup All-Purpose Flour
  • 2 cups Bread Crumbs

Step 4

Place flour, remaining egg wash and bread crumbs in 3 separate shallow dishes. Dip rolled chicken in egg, then flour, then bread crumbs, ensuring that each chicken breast is thoroughly coated in crumbs. Wrap coated breasts in foil and refrigerate overnight.


  • 12 cup Butter

Step 5

Preheat oven to 350 degrees. Remove from fridge and brown on stovetop in butter. Remove from pan and reserve butter. Place chicken in baking pan, pouring reserved butter over chicken. Bake 35 to 40 minutes until tender.
