Ingredients
Step 1
BRIOCHE DOUGH: Place sugar mixture, milk and salt in a mixing bowl. Add 2 cups of the flour and yeast solution. Beat at low speed for 2 minutes.

Beat in 4 of the eggs and remaining flour; continue to beat until the dough is firm. Add the 2 remaining eggs one at a time, beating until smooth after each. Add the butter; beat about 2 minutes.

Place the dough in a bowl; cover with a cloth. Let rise at room temperature until doubled, about 1 1/2- 2 hours. Punch down dough; cover wiht plastic wrap. Refrigerate overnight.

Preheat oven to 375 degrees. Place dough on a floured board; form into a loaf. Place in a buttered 8 1/2 by 4 1/2 inch loaf pan. Let rise again.

Slash top of loaf crosswise in four places; brush top with egg wash. Bake until lightly brown 45-50 minutes. Cool before slicing.

FRENCH TOAST: Heat oven to 375 degrees. Place eggs, milk, sugar, cinnamon and vanilla in a bowl; mix well. Slice 6 pieces of the brioche (reserving the rest for another use, or double the egg mixture to make more).

Dip slices into egg mixture, coating both side and allowing the excess to drip off. Melt butter in a large skillet; cook brioche slices, in batches, until browned, turning, 2 mins per side.

Place slices on a baking sheet; finish in the oven until cooked through, about 5 minutes.
