Broccoli & Cheddar Mini-Frittatas

Quick & easy frittata from the Biggest Loser cookbook. (one serving = 2 frittatas) calories: 102; protein: 18g; carbs: 4g; fat: 2g



Step 1

Preheat oven to 350 degrees F. Lightly mist 8 cups of a nonstick standard muffin tin w/ olive oil spray.


  • 1 cup Broccoli, Chopped & Steamed
  • 2 cups Egg Substitute

Step 2

Divide broccoli evenly among the cups (2 tablespoons in each). Then divide the egg substitute evenly among the cups (1/4 cup in each). Bake the frittatas for 7-9 minutes, or until almost set.


  • 2 ounces Low Fat Cheddar Cheese, Shredded

Step 3

Sprinkle the cheese evenly over the tops of the frittatas. Bake for 8 to 10 minutes longer, or until the egg is no longer runny and the cheese is melted. Transfer the muffin tin to a cooling rack and allow the frittatas to rest for 2 minutes before serving.
