Buffalo Chicken Meatballs

Buffalo Chicken Meatballs

Buffalo wings + meatballs = match made in Heaven! These are a perfect football snack – or party appetizer – or even a light dinner.

Note: I usually double this for a party.



Step 1

Preheat oven to 350 degrees F.

Step 2

Line a baking sheet with foil and spray with cooking spray.


  • 1 12 stalks Celery
  • 2 Green Onions

Step 3

Cut the celery and green onions into chunks and throw them into a food processor.

Step 4

Pulse to chop into small bits.


  • 1 large Egg
  • 12 teaspoon Onion Powder
  • 12 teaspoon Garlic Powder
  • 12 teaspoon Kosher Salt
  • 14 teaspoon Black Pepper
  • 14 cup Buffalo Wing Sauce, frank's preferred; if you can't find the wing sauce you can substitute frank's red hot sauce with a minor modification.

Step 5

In a large bowl, stir together the egg, onion powder, garlic powder, salt, pepper and buffalo wing sauce.


  • 12 cup Panko Bread Crumbs, might up this to 3/4 cup next time
  • 1 ounce Crumbled Blue Cheese

Step 6

Add chopped celery and green onions, panko and blue cheese crumbles to the bowl and stir to combine.


  • 1 pound Lean Ground Chicken, do not substitute ground turkey

Step 7

Add the ground chicken to the bowl and fold together to combine, but don't over mix.

Step 8

Form mixture into small meatballs about an inch or so in diameter. Place meatballs onto prepared baking sheet.

Step 9

Bake for 20 minutes or until meatballs begin to turn light brown.


  • 14 cup Buffalo Wing Sauce, frank's preferred
  • 1 tablespoon Butter, optional; only needed if using frank's red hot sauce instead of buffalo wing sauce

Step 10

NOTE: If you are using Frank's Buffalo Wing sauce then you can skip this step! If you are using Frank's Red Hot it's time to make wing sauce. Put the hot sauce and butter into a microwave safe dish. Microwave about 30 seconds, until butter melts. Stir well to combine.

Step 11

When meatballs are done, remove them from the oven and allow them to cool for a few minutes.

Step 12

Place the meatballs on a serving platter and drizzle with the buffalo wing sauce. Note: I usually place meatballs in a plastic storage bag with the wing sauce and toss to coat and then place on the platter.

Step 13

Serve with blue cheese dressing for dipping and celery sticks!
