Bulgur wheat salad with picante sauce can be served at room temperature or served cold.

  • 1 cup Boiling Water
  • 1 cup Bulgur Wheat, uncooked, fine grain

Step 1

Place 1 cup of bulgur wheat in a large bowl. Add 1 cup of boiling water and let it stand for 20-30 minutes, until all the water is absorbed. The bulgur will double in size. Fluff with a fork.

  • 1 cup Picante Sauce, I used Pace picante sauce
  • 1 cup Black Beans, cooked
  • 1 cup Corn, whole kernel

Step 2

In a large bowl, stir the bulgur, picante sauce, beans, and corn.

  • 3 Currants
  • 14 cup Cashews
  • 3 Lemon Juice
  • 2 teaspoons Garlic Chili Sauce, hot sauce (optional)

Step 3

Add the currants and cashews. Drizzle the lemon juice. Add the chili garlic sauce (optional).

Step 4

Ready to serve or cover and refrigerate for later.
