Buttermilk Cake

My favorite cake for birthdays. Has a fine texture and flavor like a wedding cake.



  • 5 Egg Whites, beaten until stiff
  • 14 cup Sugar

Step 1

Beat egg whites. Add sugar as whites stiffen.


  • 1 cup Buttermilk
  • 18 teaspoon Baking Soda

Step 2

Mix baking soda into buttermilk. Mixture will foam. Set aside.


  • 1 cup Butter, softened
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 1 34 cups Sugar

Step 3

Cream butter, sugar, vanilla.


  • 3 cups Cake Flour, sifted

Step 4

Mix alternately flour and buttermilk mixture.

Step 5

Fold in beaten egg whites.

Step 6

Bake 30 minutes at 350-degrees. Test for doneness with toothpick.
