Chili Relleno Casserole

This is a fairly easy casserole with the great taste of chili relleno.

Directions

 

Step 1

Preheat oven to 350 deg. F

Ingredients

  • 6 Eggs, separated

Step 2

Whip whites until stiff. Beat yolks until smooth. Fold yolks into whites.

Ingredients

  • 1 pound Pepper Jack Cheese, grated
  • 1 pound Sharp White Cheddar, grated

Step 3

Combine grated cheeses together.
 

Step 4

Grease a 9 x 13 in. casserole dish. Spread thin layer of the egg mixture on the bottom of the dish.

Ingredients

  • 8 ounces Canned Whole Green Chili Peppers

Step 5

Split open the green chilies and place a single layer on top of the egg in the dish. Sprinkle a layer of grated cheese on top of the chilies. Spread another layer of the egg mixture on top of the grated cheese.
 

Step 6

Repeat step 5 until the ingredients are gone, finishing with a layer of the egg mixture.
 

Step 7

Bake for 25 min., or until golden brown.
