Caldo De Pollo

Directions

Ingredients

  • 1 ear Corn, cut into 2 inch pieces
  • 2 Russet Potatoes, halved crosswise
  • 2 Carrots, thinly sliced
  • 1 small Cabbage
  • 2 quarts Water
  • 2 cloves Garlic, chopped
  • 1 12 teaspoons Salt
  • 12 Onion, chopped
  • 4 ounces Tomato Sauce
  • 12 teaspoon Ground Cumin
  • 3 Chicken Bouillon Cubes

Step 1

Place vegetables in large pot with water. Bring to boil. Add garlic, salt, onion, tomato sauce, and cumin. Stir in bouillon cubes. Simmer 20 minutes.

Ingredients

  • 1 12 pounds Boneless Skinless Chicken Breast
  • 1 Zucchini, chopped
  • 1 Summer Squash, chopped
  • 1 cup Spanish Rice, cooked
  • 2 stalks Celery, chopped

Step 2

Add chicken, zucchini, squash, and celery. Simmer 45 minutes covered until potatoes soften. Serve with Spanish rice.
