Cheeseburger Soup

  • 1 pound Ground Beef
  • 1 Onion, chopped
  • 2 stalks Celery, chopped
  • 2 cloves Minced Garlic
  • 2 Carrots, chopped
  • 12 teaspoon Salt
  • 12 teaspoon Pepper
  • 5 tablespoons Butter, divided
  • 3 cups Potato, cubed
  • 3 cups Chicken Broth

Step 1

In a large soup pot brown ground beef. Drain. Remove to a bowl. Sauté the onion, celery, carrots, and garlic in 2 tablespoons butter. Add beef back to the pot. Add salt and pepper. Add potatoes and chicken broth. Bring to a boil.


  • 3 tablespoons Flour
  • 1 12 cups Half and Half
  • 8 ounces Velveeta, cubed
  • 12 head Iceberg Lettuce, chopped
  • 1 Tomato, chopped

Step 2

Melt remaining 3 tablespoons butter in a sauce pot. Add flour. Cook a few minutes. Add to beef mixture and bring back to a boil. Boil until potatoes are done. Add the half and half and bring to a boil. Add the cheese and stir until melted. Add lettuce and tomato, cook for a few minutes.
