Chevy's Sweet Corn Tomalito (Corn Pudding)

  • 5 tablespoons Butter, softened
  • 14 cup Corn Flour, also called masa
  • 13 cup Sugar

Step 1

In a small mixing bowl, mix butter, masa, and sugar with electric mixer until light and fluffy.


  • 12 cup Water
  • 2 cups Corn Kernels, fresh or frozen (thawed)

Step 2

In a blender, blend half of corn kernels and water until smooth. Combine with Masa mixture and stir well.


  • 12 cup Corn Meal
  • 1 teaspoon Baking Powder
  • 12 teaspoon Salt
  • 2 tablespoons Milk
  • 1 teaspoon Milk

Step 3

Add other half of Corn Kernels, corn meal, baking powder, salt and milk and mix well.

Step 4

Preheat oven to 250 degrees F.

Step 5

Pour corn mixture into and 8 inch square baking pan and cover tightly with foil. Place baking pan inside larger roasting pan and fill roasting pan with enough water to cover up about 3/4 of an inch of the baking pan. Bake for 1.5 to 2 hrs. Insert a toothpick in center and if it comes out clean, it is done. Tomalito should have smooth, moist texture.
