Chicken And Rice Casserole With Puff Pastry

  • 1 can Cream of Chicken Soup
  • 12 cup Milk
  • 13 cup Mayonnaise
  • 2 cups Rice, cooked
  • 2 cups Chicken, cooked and chopped
  • 1 cup Frozen Peas and Carrots
  • 12 cup Onion, chopped
  • 12 cup Green or Red Pepper, chopped
  • 1 cup Cheese, shredded

Step 1

Preheat oven to 350. Spray large casserole dish with cooking spray. In medium bowl, combine soup, milk and mayonnaise. In another bowl, combine rice, chicken, and vegetables. Stir soup mixture into chicken mixture. Add half the cheese. Spoon into casserole dish. Sprinkle with remaining cheese. Bake until top is golden brown, about 25 minutes.


  • 1 sheet Frozen Puff Pastry, thawed
  • 1 Egg White

Step 2

While casserole is baking, roll out puff pastry dough on a floured surface. Using a cookie cutter, make cutouts in pastry. Place on cookie sheet. Brush with egg white. Place pastry cutouts in oven during last 15 minutes of baking time. Bake until golden brown. Cool slightly. Arrange cutouts on top of casserole.
