Chicken And Rice With Apples And Peppers

The Apples and the Peppers look very similar, this tasty dish will ignite your taste buds.



  • 2 large Apples, sliced, granny smith works great, unpeeled.

Step 1

Slice the apples into 1/4-inch-thick pieces and set aside.


  • 12 cup Rice, any type

Step 2

Boil the rice in it's own separate pot, drain the water.


  • 4 Chicken Thighs, boneless, skinless chicken thighs
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 cups Chicken Broth

Step 3

Season the chicken with the salt and black pepper. Heat the chicken in a 12-inch skillet over medium-high heat. Add 1 cup of the chicken broth and cook 4 minutes on each side or until golden brown. Remove the chicken and set aside, leaving the chicken broth in the pan in the pan.


  • 1 Green Pepper, chopped
  • 1 Yellow Pepper, chopped
  • 1 Onion, medium sized, diced
  • 3 cloves Garlic, minced
  • 14 12 ounces Diced Tomatoes, 1 can

Step 4

Add the green pepper, yellow pepper, onion, and garlic to the pan. Stir well and cook over medium heat until the vegetables are tender, about 10 minutes. Add the tomatoes and apples to the pan. Cook 8 to 10 minutes more.


  • 1 teaspoon Paprika, any type
  • 14 teaspoon Fresh Parsley, chopped

Step 5

With the chicken still put aside, add the rice and cook, stirring, for 2 minutes. Add the remaining 1 cup of chicken broth and bring to a boil over high heat. Reduce heat to medium-low, arrange the chicken on top of the rice mixture, season the chicken with the paprika and red pepper, and cover. Cook about 10 minutes or until the liquid is absorbed. (Feel free to add a third cup of chicken broth here) Uncover, sprinkle with the parsley. You're done! Serve it hot.
