Chicken Cacciatore

A traditional Italian dish that is easily made in one skillet and bursting with flavor. I remember this growing up and recently started making it again.

Directions

Ingredients

  • 2 tablespoons Olive Oil
  • 1 Onion, diced

Step 1

Heat olive oil in a large skillet on medium heat, add the onions and cook until translucent, stirring occasionally.

Ingredients

  • 4 Boneless Chicken Breasts
  • 2 cloves Minced Garlic
  •   Fine Ground Black Pepper, to taste
  •   Salt, to taste

Step 2

Season chicken with salt and pepper, on both sides. Move onions to the side. Add the garlic and chicken. Cook until the chicken is golden brown, be sure garlic does not burn move over with onions if is, then turn over chicken and brown on the other side. About 3 minutes per side

Ingredients

  • 13 cup White Wine

Step 3

Add wine and simmer until reduced by half.

Ingredients

  • 8 ounces Fresh Mushrooms, fresh sliced
  • 1 Red Bell Pepper, diced
  • 3 Roma Tomato, diced
  • 14 cup Chicken Broth

Step 4

Add the tomatoes, pepper, mushrooms, broth, lower the heat and cover the skillet. Cook the chicken in the simmering liquid, turning and basting from time to time. Cook about 30 minutes.

Ingredients

  • 14 cup Fresh Basil, coarsely chopped

Step 5

Mix in Fresh basil and cook heat through for about 2 minutes
