Chicken Caprese Foil Packets

I'm single. Veggies will vary by what I have on hand at the time, but always includes small tomato halves or slices. I make up 4 to 8 of these at a time and then freeze. I move one packet from freezer to fridge the night before.



  • 1 Aluminum Foil, approx 8-10"

Step 1

Fold aluminum foil in half, so that you have one piece that is two layers.


  • 1 Boneless Skinless Chicken Breast, or 2 chicken tenderloins.

Step 2

Place chicken breast in center of foil.


  • 3 Ciliegine Mozzarella Balls, cut in half
  • 2 Basil Leaves

Step 3

Arrange basil leaves and cut halves of Ciliegine Mozzarella Balls evenly over top of chicken breast.


  • 12 cup Fresh or Frozen Veggies of Choice

Step 4

Top with veggies of choice.

Step 5

Close foil packet.

Step 6

When ready to cook, heat oven to 400 degrees. Open foil packet and reclose loosely. Cook for 20-25 minutes.


  • 12 ounce Balsamic Vinegar

Step 7

Drizzle with balsamic vinegar before serving.
