This is a classic French roast chicken casserole with white beans.
Directions |
Ingredients
Step 1
Liberally spray cast iron skillet with cooking spray. Cook bacon. Drain on paper towel and set aside.

In bacon drippings, brown chicken and sausage about 10 minutes per side until nicely browned.

Transfer chicken and sausage to a baking dish or roasting pan. Roast in oven at 375-degrees for 15 minutes.

While chicken and sausage are roasting, saute onion, garlic, and parsley in the same skillet with bacon drippings. Saute about 5 minutes until onions soften.

Add tomato sauce, white wine, salt, pepper, and bay leaf to onions and bring to boil.

Add drained beans to tomato and stir well. Return to boil then remove from heat.

Step 7
Arrange sausage and chicken directly atop the tomato and bean mixture in the skillet. Return skillet to 375-degree oven for 45 minutes.
