Chicken Curry

Chicken Curry

If you love curry you will love this homemade recipe for any night of the week.



  • 2 Boneless Skinless Chicken Breasts, cut into 2 inch pieces
  • 1 tablespoon Coconut Oil, or olive oil

Step 1

Heat the oil over medium-high heat, add chicken. Cook until browned.


  • 1 large Russet Potato, peeled, washed and chop into chunks the size of the chicken.
  • 1 Yellow Onion, quartered, then quartered again. you want sizes equal to the chicken cuts.
  • 4 Carrots, peeled, washed and cut up into 1inch pieces.

Step 2

Once the chicken is browned, start adding the potatoes, carrots, and onion.


  • 2 tablespoons Fish Sauce
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 3 tablespoons Curry Powder

Step 3

In a separate bowl, mix the fish sauce, sugar salt, pepper, and curry powder. Once mixed, add it into the skillet, toss everything to coat it well. Cook for about 5 minutes.


  • 1 can Coconut Milk

Step 4

Add the coconut milk, stir to coat. Cover the pan for about 30 minutes, stirring every so often.


  • Fresh Basil ~optional~, roughly sliced

Step 5

Remove pan from stove. Serve with coconut rice and sprinkle basil on top.
