Directions

Ingredients

  • 3 pounds Chicken, white/dark

Step 1

Season chicken with salt and pepper.
 

Step 2

Heat olive oil in a large pot. Add chicken.

Ingredients

  • 1 Red Onion
  • 1 Fresh Ginger, 2-inch piece, chopped
  • 2 cloves Garlic
  • 2 Carrots
  • 1 Star Anise
  • 1 tablespoon Curry Powder
  • 2 Whole Cloves
  • 1 Dried Whole Bay Leaf
  • 1 Jalapeno Pepper, diced

Step 3

Add in onion, ginger, garlic and carrots. Sauté until the onions are translucent, about 5 minutes. Combine spices and add to the pot. Stir over medium heat till spice is fragrant. Add minced jalapeños.

Ingredients

  • 3 Tomatoes, cut into pieces
  • 1 cup Coconut Milk
  • 5 cups Water
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 Asian Pear, peeled and diced (or bosc/other firm pear)
  • 2 Limes, juiced

Step 4

Pour in coconut milk and water. Simmer for 20 minutes, and then add the tomatoes and pears. Finish with lime juice.
