Chicken Enchiladas

Easy chicken enchilada/burrito recipe.

Directions

 

Step 1

Preheat oven to 350 degrees.

Ingredients

  • 1 Rotisserie Chicken, Store bought, shredded finely
  • 2 Jalapeno Peppers, Finely chopped
  • 14 Yellow Onion, Finely chopped
  • 1 can Corn, Drained
  • 1 Black Beans, Drained
  • 1 can Red Enchilada Sauce
  • 12 cup Sour Cream, Or you can use a sour cream substitute like Tofutti Sour Supreme
  • 1 cup Sharp Cheddar, Finely shredded

Step 2

Mix all ingredients together in a large bowl. Save some of the enchilada sauce to pour over the top of the enchiladas.

Ingredients

  • 10 Tortillas, If you use the small ones (8 inch) you will need more than 10

Step 3

Add some of the mixture to each tortilla and roll up. Place them into a casserole dish.
 

Step 4

Pour the rest of the enchilada sauce on top of the enchiladas
 

Step 5

Place the casserole dish with the enchiladas in it into the preheated oven. Cook for 15-20 minutes.
