Chicken Salad Delight

  • 12 cup Birch Sugar
  • 12 cup Fresh Lemon Juice
  • 2 teaspoons Yellow Onion, diced
  • 1 teaspoon Dijon Mustard
  • 12 teaspoon Sea Salt
  • 23 cup Grapeseed Oil
  • 1 tablespoon Poppy Seeds

Step 1

In a blender or food processor, combine birch sugar, lemon juice, onion, mustard, and seasalt. Process until well blended. With machine still running, add oil in a slow, steady stream until mixture is thick and smooth. Add poppy seeds, and process just a few seconds more to mix.


  • 1 head Romaine Lettuce, torn into bite-size pieces
  • 4 ounces Goat Cheese, crumbled, or low fat swiss cheese
  • 1 cup Raw Unsalted Cashews
  • 14 cup Dried Unsweetened Cranberries
  • 1 Apple, Green, peeled, cored and diced
  • 1 Pear, peeled, cored and sliced
  • 3 Cooked Chicken Breasts, diced

Step 2

In a large serving bowl, toss together the romaine lettuce, crumbled goat cheese cheese, cashews, dried cranberries, apple, pear and diced chicken. Pour dressing over salad just before serving, and toss to coat.
