Chicken Tagine

Chicken Tagine

I added the following ingredients to this recipe; Cumin, carrots, lemon, lime, parsley, olives, ginger, red pepper flakes, cayenne pepper, and an additional tablespoon of tomato paste. I also increased the boil and simmer time.



  • 1 tablespoon Olive Oil
  • 1 Onion, cut into small wedges
  • 3 Garlic Cloves, sliced

Step 1

Heat the oil in a large pan over medium heat, add the onion and garlic, and cook for 3 minutes, stirring frequently.


  • 1 pound Boneless Skinless Chicken Breast, diced
  • 1 teaspoon Ground Cumin
  • 2 Cinnamon Sticks, lightly bruised
  • 12 teaspoon Tumeric, 1/2 teaspoon turmeric

Step 2

Add the chicken and cook, stirring constantly, for an additional 5 minutes, or until sealed on all sides. Add the cumin, tumeric and cinnamon sticks to the pan halfway through sealing the chicken.


  • 1 tablespoon All-Purpose Whole Wheat Flour

Step 3

Sprinkle in the flour and cook, stirring constantly, for 2 minutes.


  • 1 Red Bell Pepper, seeded and chopped
  • 1 cup Eggplant, diced
  • 38 cup White Mushrooms, sliced

Step 4

Add the eggplant, red bell pepper, and mushroom and cook for an additional 2 minutes, stirring constantly.


  • 2 tablespoons Tomato Paste
  • 2 12 cups Chicken Stock

Step 5

Blend the tomato paste with the stock, stir into the pan, and bring to a boil.


  • 1 14 cups Canned Chickpeas, drained and rinsed
  • 13 cup Dried Apricot, chopped
  • 4 large Carrot, thinly sliced
  • 5 sprigs Fresh Flat-leaf Parsley

Step 6

Add the chickpeas, carrot, parsley and apricots.


  • 1 teaspoon Ground Ginger
  • 12 cup Rice Vinegar
  • 12 cup Briny Olives, gently crushed

Step 7

Add Ginger, Vinegar, and Olives.


  • Red Pepper Flakes
  • Cayenne Pepper
  • 1 Lemon, juiced
  • 1 Lime, juiced

Step 8

Add Red Pepper Flakes, Cayenne Pepper, Lemon Juice and Lime Juice to taste.

Step 9

Boil for 30 - 45 minutes until liquid reduces and sauce thickens a bit.

Step 10

Reduce heat, cover and let simmer for 1 hour or until the chicken is tender and sauce has thickened.


  • Salt and Pepper
  • 1 tablespoon Fresh Cilantro, chopped

Step 11

Season with salt and pepper, remove cinnamon sticks and serve at once, sprinkled with cilantro.
