This dish was actually invented in Britain. "Chicken tikka" refers to pieces of chicken marinated in yogurt and spices before cooking. "Masala" is a mix of spices, referring to the sauce. Serve with rice or naan bread. Chicken legs or pork can be used if you want.

For the marinade, put the salt, garam masala, ginger, garlic, and yogurt in a bowl. Mix well.

Add the chicken pieces to the marinade and toss to coat, covering them completely. Leave for about 15 minutes to marinade.

Heat the oil in a frying pan over medium heat. Saute the onion until soft and lightly browned. Add the remaining garlic and ginger. Saute until fragrant.

Add the tomatoes and saute until most of the moisture has evaporated. Add the cumin, garam masala, salt and sugar. Simmer for about 2 minutes, stirring occasionally. Add the water and simmer for 2 more minutes. Remove the sauce from the pan and reserve.

Clean the frying pan with a paper towel. Heat more oil in the pan over medium heat. Remove the chicken from the marinade and saute in the pan until cooked through. Return the sauce to the pan and bring briefly to a boil, then quickly remove from the heat so it doesn't burn. Add more salt if needed.

Transfer the curry to a serving dish and garnish with the chopped parsley. Enjoy with turmeric rice, rice, or naan bread.
