This recipe is intended for easy pre-made meals. For on the go and quick heat up.



Step 1

This meal is great for cooking ahead and freezing. So make it in a big batch!


  • Boneless Skinless Chicken Breast

Step 2

Boil chicken in water until cooked through.


  • Cauliflower
  • Broccoli

Step 3

Steam cauliflower and broccoli until fork tender - but don't cook too long so they don't get mushy.


  • Pesto or Alfredo Sauce
  • Frozen Peas

Step 4

In individual storage containers build your lunch: On the bottom pour some sauce (pesto or alfredo), then top with some frozen peas, then the rest of your veggies and top with chicken.

Step 5

Put in the fridge for up to 4 days. Put in the freezer for up to a month, use saran wrap to tightly cover the food - letting out as much air as possible, then top with foil then the lid. When reheating from the freezer, microwave for 3 minutes, or until heated through.
