Chicken Vesuvio

  • 1 pound Red New Potato, quartered
  • 1 Red Pepper, cut into strips
  • 1 small Onion, cut lengthwise in 1/2 then thinly sliced
  • 6 cloves Minced Garlic
  • 8 Boneless Skinless Chicken Thighs, 2 lbs

Step 1

Place potatoes, onions, peppers and garlic in slow cooker; top with chicken.


  • 14 cup Flour
  • 12 cup Bottled Zesty Italian Dressing
  • 14 cup Lemon Juice

Step 2

Whisk flour, dressing and lemon juice until blended; pour over ingredients in slow cooker. Cover with lid.

Step 3

Cook on low 7-9 hours or high 5-6 hours.


  • 1 cup Frozen Peas
  • 14 cup Fresh Parsley, chopped

Step 4

Stir in peas, cook uncovered, 10 minutes or until peas are heated through. Sprinkle with parsley.
